Brrrrrrr!  With frenzied winds and saturating rains, riding is definitely out today.  Yes, even in southern California, we DO get winter weather from time to time!    However, today is the perfect day for some warm-and cozy-yummy-in-my-tummy-baking-goodness!

Once again drawing on our horse’s health practices, I’m baking this tasty favorite that not only satisfies my need for some comforting baked goods, but also satisfies my waist line!

Try this Apple Oatmeal Muffin recipe; low in calories, big on taste, and packed with health benefits! Apples are full of vitamins, antioxidants and fiber, making them great immune boosters, as well as superheros for fighting diabetes and heart disease.  Oatmeal is also a great item to incorporate into your diet, proven to lower cholesterol and fight cancer!

Apple Oatmeal Muffins

1 1/4 c. whole wheat flour
1 c. old fashioned oatmeal
2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2-1 tsp. cinnamon
1/2 c. skim milk
1/4 c. oil
1/3 c. honey
2 c. shredded (or diced) apple

Stir together wet ingredients (including apple), and then add to dry mixture.  Mix well.  Bake in muffin pan at 350′ degrees for 20 minutes. Yield: 12 to 15 muffins, about 190 calories, 5 grams fat.  Cool, eat, enjoy!
